Pork Spice Rub

You may never use another rub again, it’s that good.

2 Tbsp. paprika
1 Tbsp. kosher salt
1 Tbsp. ground black pepper
1 Tbsp. cumin
1 Tbsp. chili powder
1 Tbsp. brown sugar (dark brown is better)
1/2 Tbsp. cayenne pepper

1-2 Tbsp. extra virgin or regular olive oil

Take out the meat you will be using and place in a pan. Combine all the spices together in a small bowl and set aside. Spread the olive oil all over the meat, then sprinkle the spices over and rub in an all over the meat, using all of the spices. Cover pan and place in fridge several hours or overnight. Prepare meat either on grill, rotisserie or oven – whatever you wish. Enjoy.

Slow Cooker Meatballs

Oh how I love the big slow cooker my daughter gave me for Christmas! Never having one before, I have to say that learning to use it was a snap. Life just got so much easier to make a big batch of frozen, pre-cooked meatballs. These will be great for a Superbowl party or as we had them, with some buttered egg noodles and steamed broccoli. You will make these again & again, I promise. Recipe is based on a 5qt. or larger machine.

1 cup grape juice
1 cup apple juice
1 cup ketchup
8 oz. can tomato sauce
1 package (48-64 oz.) frozen, fully cooked Italian meatballs

In a medium bowl, combine everything up to the meatballs. Put the meatballs in the cooker, pour the sauce over and gently mix to coat as best you can. Cover and coover on low for 4 1/2 hours our until heated through. Mix thoroughly before serving.

Pork Shoulder

Pop this in a 350 degree oven for about four hours and you’ve got a meal for 2-3 days, depending on how many are eating. Save that meaty bone for some homemade soup.

8-10 lbs. bone-in pork shoulder
3 Tbs. olive oil
4 Tbsp. paprika
2 Tbsp. kosher salt
1 Tbsp. ground black pepper
2 Tbsp. cumin
2 Tbsp. chili powder
2 Tbsp. dark brown sugar
2 tsp. cayenne pepper

The night before you plan on serving, place the the meat on a rack in a roasting pan, fat side up, and rub the olive oil all over. Then mix all other ingredients together and with your hands rub all over the pork and pat it on. Cover with foil and place in the fridge.

Preheat oven to 350, take rack out of fridge, place on counter while oven preheats. Uncover, place in oven for about 4 hours, or until done. Let rest 10 minutes before you slice and serve.
