Crockpot Barbecue Pork Ribs

Get out the napkins! Your large crockpot will fit 6-8 lbs or four slabs. I served these with homemade cornbread and coleslaw. Wow.

6-8 pounds pork spare ribs, cut into 3-4 ribs
4 cups of your choice of barbecue sauce (I used Sweet Baby Ray’s)
1 cup ketchup
2 Tbsp. worcestershire sauce
1/4 cup firmly packed dark brown sugar

Lightly grease your crockpot with a cooking spray. Arrange the ribs in the slow cooker. Whisk/combine all the other ingredients and pour in and around the ribs – lift the ribs and get the suace underneath. Cover and cook on LOW for 8 hours or until meat begins to separate from the bones. Serve immediatley.

Slow Cooker Pulled Pork

Long, slow, cooking will guarantee the best results. This is delicious.

4-6 pounds pork shoulder
2 large, white onions, sliced
1 Tbsp. garlic powder
1tsp. kosher salt
1/2 tsp. ground peppper
1-1/2 cups cold water
2 cups (or 18 oz. bottle) BBQ sauce
Another large white onion, diced

Spray your slow cooker with cooking spray and place 1 of the sliced onions in the bottom, add pork, garlic powder, salt, pepper , water and then add the other sliced onion on top (you’ll use the 3rd onion later). Cover and cook on LOW for 8 hours or HIGH for 5. Drain liquid, coarsley chop up the meat, discard fat, place prk back in slow cooker, add BBQ sauce then the last onion. Cover and cook on LOW for 4 more hours. Serve on large rolls.

Slow Cooker Tomato Meat Sauce

Serve over your favorite pasta now, freeze some for later. This makes a big batch so you’ll need a big crockpot. Sprinkle some grated Parmesan or Pecorino Romano over top.

1/4 cup extra virgin olive oil
2 yellow onions, diced
4 minced garlic cloves
2 pounds ground beef
Five of the 29 oz. cans of tomato sauce
1 Tbsp. dried oregano
1 Tbsp. dried basil

Warm the olive oil in a large skillet then add onons and cook about 5 minutes – until softened, add garlic and cook another minute. Add the ground beef and cook until browned, stirring occasionally.

Meanwhile, lightly grease the crockpot. When beef is browned, scrape into crockpot, add the tomato sauce, cover, set on low and cook for 8 hours – At the four hour mark, add the spices then cook 4 more hours.

 

Slow Cooker Meatballs

Oh how I love the big slow cooker my daughter gave me for Christmas! Never having one before, I have to say that learning to use it was a snap. Life just got so much easier to make a big batch of frozen, pre-cooked meatballs. These will be great for a Superbowl party or as we had them, with some buttered egg noodles and steamed broccoli. You will make these again & again, I promise. Recipe is based on a 5qt. or larger machine.

1 cup grape juice
1 cup apple juice
1 cup ketchup
8 oz. can tomato sauce
1 package (48-64 oz.) frozen, fully cooked Italian meatballs

In a medium bowl, combine everything up to the meatballs. Put the meatballs in the cooker, pour the sauce over and gently mix to coat as best you can. Cover and coover on low for 4 1/2 hours our until heated through. Mix thoroughly before serving.

Barbecue Smokies

Ah, another easy slow cooker recipe.  Wow.

2 lbs. (or 2 14 oz. pkgs.) mini smoked sausages
28 oz. bottle barbecue sauce
1 1/4 cup water
3 Tbs. Worcestershire sauce
3 Tsb. steak sauce
1 tsp. garlic powder

Place everthing in your slow cooker, mix well, simmer for 6 hours.  Yes, that’s it.
